Cheesy Penne with Rocket

This dish is easiest to make in a wok, so the sauce coats the penne and the ingredients evenly distribute. Add the rucola & mozzarella at the last minute to keep as much flavor, and to make sure the mozzarella doesn’t string too much. It doesn't take long to prep or cook and also works well cold as a salad.

Ingredients

Zucchini
Sun-dried tomatoes
Canned tomatoes
Mozzarella
Rocket salad

Oregano

Prep

  1. Dice onion
  2. Cut zucchini into small cubes
  3. Cut sun-dried tomatoes in small strips
  4. Cut mozzarella into small cubes

Cook

20 min

Cook pasta

~10 min

In the meantime, sauté onion, oregano, basil

medium/high heat ~3 min

Add zucchini, sun-dried tomato

stir ~3 min

Add canned tomatoes

bring to a simmer ~5 min

Add drained cooked pasta

turn off heat, stir ~1 min

Add rocket and mozzarella

stir slightly ~1 min
