Colorful Couscous with Apricot

A super easy one-pot recipe with a sweet and fresh taste. You could also serve this as a salad on hot summer days.

Ingredients

Couscous (whole wheat)
Fresh beetroot
Zucchini
Dried apricots
Walnuts

400 ml

Bouillon (vegetable)
Cinnamon
Cumin
Lime
Garlic
Fresh mint

Make it a dinner party🎉

Add 1 tea sp ground cardamom and use pistachios instead of walnuts.

Variation

Use diced pre-cooked beetroot instead of fresh beetroot.
Add soft goat cheese for creaminess.

Prep

  1. Mince garlic
  2. Cut dried apricots into small pieces
  3. Cut zucchini into quartered slices
  4. Grate fresh beetroot
  5. Chop walnuts

Cook

Make bouillon

Sauté garlic, beetroot and zucchini

Add bouillon, cinnamon, and cumin

bring to boil

Add couscous

follow instructions of the couscous ~5 min

Add walnuts, apricots and mint
