Moroccan Soup

This is a simpler version of a classic Moroccan dish and a great option for finishing some old bread. Simmering the sauce for some time creates a deep flavour.

Ingredients

4-5 servings

Canned tomatoes
Chickpeas
Lentils
Carrots
Bell pepper

Bread (optional)

ca. 30 g
ca. 70 g

Tomato paste
Lemon

Cumin
Cinnamon
Paprika powder
Stock (vegetable)

Onion
Garlic

Prep

  1. Dice onion and mince garlic
  2. Cut carrots into slices
  3. Cut bell pepper into small strips

Cook

20 min

pan 2 red

Sauté onion and carrots

medium/high heat ~3 min

Reduce heat and add ginger and garlic

~4 min

Add cumin, paprika powder, and cinnamon

~1 min

Add tomato paste

~1 min

Add bell pepper, canned tomatoes and stock (ca. 500 ml)

simmer ~15 min

Add chickpeas, lentils and some lemon juice

bring to boil and simmer ~5 min

  • Garnish with fresh coriander
  • Look up 'authentic harira soup' to add more complexity to the taste
