
Moroccan Soup
This is a simpler version of a classic Moroccan dish and a great option for finishing some old bread. Simmering the sauce for some time creates a deep flavour.

- Dice onion and mince garlic
- Cut carrots into slices
- Cut bell pepperĀ into small strips
Cook
20 min

SauteĢ onion and carrots
medium/high heat ~3 min
Reduce heat and add ginger and garlic
~4 min
Add cumin, paprika powder, and cinnamon
~1 min
Add tomato paste
~1 min
Add bell pepper, canned tomatoes and stock (ca. 500 ml)
simmer ~15 min
Add chickpeas, lentils and someĀ lemon juice
bring to boil and simmer ~5 min

- Garnish with fresh coriander
