Pak Choi Stir-fry

This version of a Chinese pak choi stir-fry gets its fresh and satisfying flavour from the combination of soy sauce and lime juice.

Ingredients

Rice (whole wheat)
Pak choi
Mushrooms
Peanuts
Spring onion

Red chilli pepper
Ginger
Soy sauce
Lime
Garlic

Tip

Use a stainless steel or cast iron pan instead of a non-stick pan to avoid health risks of non-stick pans at very high temperatures.

Prep

  1. Mince ginger and garlic
  2. Cut red chilli pepper finely
  3. Cut spring onions
  4. Cut pak choi stem into strips, cut leaves into large strips
  5. Cut mushrooms into slices

Sauté pak choi without oil

heat up the pan as hot as possible before adding the pak choi, sauté pak choi and set aside ~2 min

After setting pak choi aside, sauté mushrooms in the same pan in some oil

high heat ~3 min

Add red chilli pepper, ginger, garlic, spring onions, peanuts

~3 min

Add soy sauce

~2 min

Add pak choi and lime juice

season with salt and pepper, add lime juice to taste ~2 min

Serve the rice with the stir-fry
