Pasta Auberginara

Even though it doesn’t look like Pasta Carbonara at all, the aubergine sauce brings the same creaminess to this dish.

Ingredients

Spaghetti (whole wheat)
Aubergines
Cherry tomatoes
Chestnut mushrooms
Rocket

Oregano
Onion
Garlic

Prep

10 min

  1. Mince garlic
  2. Dice onion
  3. Cut aubergine into small cubes
  4. Cut mushrooms into slices

Cook

20 min

Sauté onion and mushrooms

high heat, season with salt and pepper ~5 min

Add tomatoes and oregano

when done, set aside and wipe pan ~3 min

Cook pasta

save water when draining ~10 min

In the meantime, sauté garlic and aubergine

reuse the pan ~8 min

Add 200 ml of pastawater 

let the water absorb ~3 min

Puree into a smooth sauce

season with salt and pepper ~3 min

Add rocket, sautéed tomatoes and mushrooms
