
Sweet Potato and Lentil Curry
This one-pot curry is inspired by one of BBC Good Food's most popular recipes. By cooking the red lentils (don't use canned lentils) in the sauce it becomes a savoury stew with plenty of protein and fibre. You could also replace the spices with a Thai red curry paste.

- Mince garlic and dice onion
- Grate ginger
- Peel sweet potatoes and cut into 1 cm cubes

Sauté onion
medium heat ~3 min
Add ginger and garlic
medium heat ~2 min
Add curry powder, chilli flakes, lemongrass and laos
medium heat ~1 min
Add coconut milk, water, peanut butter, lentils and sweet potatoes
mix well, lower heat, simmer and stir occasionally ~12 min
Add spinach and lime juice
add spinach and squeeze the lime and let everything simmer until warm ~3 min
taste and add salt and pepper if needed
Garnish with peanuts
