Zucchini and Peach Wraps

The fresh taste of the mint and peaches is a delicious combination with the mediterranean veggies and a bit of spiciness. Don’t be shy with the mint, this recipe needs lots of it.

Wraps (whole wheat)
Zucchini
Yellow bell peppers
Tomatoes
Canned chickpeas
Canned peaches

(Plant-based) creme fraiche
Red chilli pepper
Ginger
Lemon
Smoked paprika powder
Soy sauce
Garlic
Fresh mint

Prep

  1. Mince garlic and ginger
  2. Deseed and cut the chilli pepper
  3. Cut zucchini into quartered slices
  4. Cut yellow bell pepper into short strips
  5. Cut tomatoes into cubes
  6. Cut peaches into cubes

Cook

15 min

Stir half of the garlic and all of the chilli pepper through the creme fraiche

Sauté zucchini, bell pepper, garlic, soy sauce and ginger

high heat, stir regularly ~7 min

Add tomatoes, chickpeas and paprika powder

drain chickpeas before adding, medium heat ~3 min

Add peaches and squeeze lemon

let everything simmer until warm ~3 min, season with salt and pepper

keep this short as the peaches will lose flavour when simmered too long

Serve the wraps with the seasoned creme fraiche, veggie mix and plenty of mint
